Vigorous clump-forming perennial with a thick, tapering and branching, fleshy taproot. Very large, coarse, toothed basal leaves. Leafy stems bear panicles of white flowers in summer.

Cultivated for its cream coloured, pungent roots which are widely used for culinary purposes, especially for making sauces.
Also used as a medicinal herb.
