description:
Culinary vegetable. Large thistle-type flower heads have scaly bracts tinted dark reddish purple, enclosing purple-mauve tufted flowers. Forms a big clump with large jaggedly cut, silvery grey-green basal leaves.

cultivation:
Moist, well drained soil and full sun. Best in light soils and a reasonably warm location sheltered from cold winds.
In cold areas the rootstock should be protected by a dry winter mulch.

propagation:
From seed. Sow in April and transplant to their final position the following year.
